Polenta Pound Cake

This versatile cake is made even better by the addition of toppings such as Caramelized Pineapple, Warm Chocolate Sauce, or Lemon Curd. And of course, a glass of your favorite Papapietro Perry Pinot Noir!

INGREDIENTS

⅔ c. butter - softened
2 ⅔ c. sifted powdered sugar
2 eggs
1 t. vanilla
1 c. flour
½ c. yellow corn meal

Cream butter and sugar together until well blended. Beat in eggs and vanilla. Combine flour and cornmeal and stir into batter until thoroughly blended.

Grease and flour an 8½ by 4½ loaf pan. Pour in batter.

Bake in 325° oven until toothpick comes out clean- 1 to 1½ hours.
