Thai Curry
Thai curry refers to dishes in Thai cuisine that are made with various types of curry paste; the term can also refer to the pastes themselves. A Thai curry dish is made from curry paste, coconut milk or water, meat, seafood, vegetables or fruit, and herbs. Dave, our assistant winemaker and staff chef, uses a Thai green curry paste he found at a local market. This green curry paste adds that wonderful heat flavor of a curry without being overly spicy.

Ingredients and Directions
**INGREDIENTS**
- 3 T. Thai green curry paste
- 2-3 cloves garlic minced
- 1 inch ginger
- 2 Serrano Chili peppers
- 1 can Coconut milk
- 2-3 T. fish sauce
- 2 T. sugar
- Juice of 2 limes
- Your choice of veg and protein
- zucchini in small chunks
- eggplant in small chunks
- Green beans, blanched
- Add chicken, salmon, etc.
**DIRECTIONS**
Sauté green curry paste, garlic, ginger and serrano chilies for about 5-10 minutes until it gets dark.
Add the can of coconut milk, ½ can of water, fish sauce, sugar, lime juice and salt to taste.
Add the vegetables and protein and simmer for about 10 minutes. .
Meanwhile, in a large sauté pan over medium heat add garlic, olive oil, sausage and ½ of the herbs and cook until sausage is brown, set aside in bowl.
Serve over rice.
